This course is designed for microbiology analysts who are involved in the detection of EHEC/STEC in fresh produce and/or meats. Participants will attend lectures and perform hands-on research for laboratory analysis, to include an overview of the FDA Bacteriological Analytical Manual (BAM) on Diarrheagenic E. coli, as well as USDA Food Safety and Inspection Service (FSIS) Microbiology Laboratory Guidebook on E. coli adulterants. Laboratory work will include FDA and USDA sample preparation methods, plating using chromogenic media and rapid methods for STEC detection.
