Analysis and Risk Assessment of Listeria in Frozen Foods

Course Description

With the increase in recalls with frozen foods, there is a need to provide a more detailed understanding of microbiological techniques for the detection of Listeria monocytogenes. Participants will learn the BAM methods for detection following an accelerated method using screening techniques and isolation procedures. Additionally, risk assessments on recent outbreaks will be discussed in order to provide a practical understanding of infectious dose and the development of listerosis in immunocompromised individuals.
