Course Description

Extensive hands-on laboratory analysis from sample preparation through identification.  Food samples will include produce, cheeses and frozen vegetables.  Participants should be familiar with good laboratory practices and conventional microbiological methods.

Emphasis will be placed on the FDA Bacteriological Analytical Manual (BAM) Chapter 10.
